| Finding answers to cooking eggplant. I came across a recipe calling for the eggplant to be cooked whole, baked and then drained of the "bitter juices" before eating. I've never heard of such a thing. Is this real? Nita |

          ANSWER: I've never
          heard of doing all that to an eggplant.  The bitter taste comes
          from the seeds.  You can slice them (peeled or not) and salt them
          thoroughly and let the slices stand for about 30 min.  Drain off
          the water and use.  We love them fried.
         
          I peel and slice them
          thin.  Salt and stand and drain.  Then beat an egg with a
          little milk.  Season some flour with salt and pepper and a tiny
          pinch of cayenne.  Pull the slices through the egg mixture and
          then flour. Lay in a single layer for a few minutes until the egg
          starts to come through the flour and flour again.  Dust off the
          excess and pan fry in hot oil.  Its best to drain on a cake rack
          and serve immediately.
