| The best way we have found to freeze any type of
        peas or green beans is to bring water to a rolling boil, put peas or
        beans in the water and blanch for 1 to 2 minutes.  Be careful not
        to over blanch.  You will notice the peas or beans turning a deeper
        green. Remove pot from heat and drain hot water off peas in a colander. 
        Plunge peas or beans into ICE water.  Be sure to have plenty of ice
        in the water as the hot peas will melt it.  The ice water stops the
        cooking process.  This process should keep the peas or beans nice
        and firm.  Place in plastic freezer bags, or freezer containers and
        freeze immediately. If you find that the peas or beans are not firm when you thaw them out, you blanched them to long or did not cool them quick enough. Byron |
