Question:

I am substituting Atkins flour in my cooking.  Can I also use it in bread recipes?

I did a bunch of searches on many different sites. This is the ONLY recipe that came up. Many used soymilk and this one is designed for a bread machine but I get the feeling you are an old hand at bread making. This will give you an idea of the ratio of soy flour to wheat flour to white flour. Enjoy, Nita

Raisin Soy Bread
A wonderful bread which uses soy milk and soy flour to replace the milk
   and part of the bread flour. Prep Time: approx. 10 Minutes. Cook Time:
   approx. 1 Hour . Ready in: approx. 3 Hours . Makes 1 - 2 pound loaf (15
   servings).

1 1/4 cups soy milk
1 1/2 teaspoons salt
2 tablespoons honey
2 tablespoons butter, softened
2 cups bread flour
1 cup whole wheat flour
1 cup soy flour
2 teaspoons ground cinnamon
2 1/4 teaspoons active dry yeast
1 cup raisins
 

Directions
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select basic bread setting, light/medium crust setting; press Start. If your machine has a Fruit setting, add the raisins and
at the signal, or about 5 minutes before the kneading cycle has finished.
