ZUCCHINI PANCAKES

  • 1 1/2 cups shredded zucchini
  • 1 egg, lightly beaten
  • 2 T. baking mix
  • 3 T. grated Parmesan cheese
  • 1 T. cooking oil

In a bowl, combine zucchini, egg, baking mix, and cheese. Heat oil in a skillet over medium heat; drop batter by 1/4 cupfuls and flatten. Fry until golden brown; turn and cook the other side. Yield: 4 servings. Recipe can be doubled.
