HERBED GREEN BEANS

  • 1 1/2 pounds fresh green beans
  • 1/2 cup finely chopped onion
  • 2 T. butter
  • 3 T. lemon juice
  • 1 T. chopped fresh parsley (or 1 tsp. dried)
  • 1 tsp. salt
  • 1 1/2 tsp. chopped fresh thyme or 1/2 tsp dried
  • 1/4 tsp. paprika

In a saucepan, cover beans with water and cook until crisp tender. Meanwhile, in a skillet, sauté onion in butter until tender. Add lemon juice, parsley, salt thyme, and paprika. Drain beans; add herb butter and stir to coat. Serve immediately.
