Years back one of our local grocery store bakeries would make a chocolate cookie for selling at the West Texas Fair. They rarely carried it in their regular line but always offered it during the special exhibit at the fair. It was fairly light but chewy and the outside was crisp like it had egg whites whipped and then folded with the other ingredients. I have never been able to make a cookie as good. Does anyone have a recipe or suggestions? Nita
