Try this.  It is great!   Really good with corn bread muffins.   
 

Mexican Chicken Bake

 
  • 1 can Cream of Chicken Verde soup
  • 1 cup of Salsa (I use the mild)
  • 1/2 cup water
  • 1 cup drained canned corn
  • 3/4 cup uncooked rice
  • 4 boneless chicken breast halves
  • Paprika
  • 1/2 cup shredded Cheddar cheese
 
Combine soup, salsa, water, corn, and rice in baking dish.  Top with chicken and sprinkle with the paprika if you like.  This can be optional.  Cover and bake at 375 for 45 min. or until done.  Sprinkle while hot with the cheese.  Can also use the mozzarella cheese.
