4 C. chopped zucchini (about 2 medium sized)

1/2 medium onion, thin sliced

4 eggs, beaten

1/2 teaspoon salt

1/8 t. pepper

In an 8 inch square baking dish, place squash and onion. Cover with vented plastic wrap. Place dish on white ceramic tray. Microwave on high for 7 minutes, drain.

Combine eggs, cheese and salt, pour over vegetables. Microwave at medium for 7 to 8 minutes ur until center is set.

Serves 4.
