Baked Chicken and Rice

  • 1 cut up chicken ( I like to use boneless breasts)
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1 soup can Water
  • 1/2 envelope Dry Onion Soup Mix
  • 1 Cup uncooked rice
  • 1 teas. or more Poultry Seasoning (optional)
  • Fresh onion and celery to taste

Generously grease a 9x13" baking dish. Chop onion and celery. How much you add is determined on your own individual taste. Mix the cream of celery and mushroom soup with the can of water. Add the rice, onion and celery, dry onion soup mix and poultry seasoning. I start off with a teaspoon of the poultry seasoning and go "smell". Some like more, some like less. Pour into prepared dish. Top with chicken pieces and then coat them with a little cooking oil, salt and pepper.

Cover this with foil and bake for 2 hours at 350°. Uncover for the last half hour so the chicken can brown.
