Stuffed Squash |
One of my sister's shared this with me, and it is wonderful and easy! I used an over large oblong squash that came up as a volunteer. I used my microwave to thaw out the sausage, cook it and also pre-cook the squash. The overall time to cook the squash will depend on the variety and size.
Scrub squash clean, half or quarter if it's very large and remove seeds. Cook in 1-2" of water covered until barely tender. I used my microwave and cooked it for 12-15 minutes. Leave covered while you prepare the sausage by crumbling it into a microwave safe container, cover and cook for 5 minutes or until done. Drain off fat. In a medium sauce pan prepare stuffing following directions. Add the sausage. Drain most of the water from the squash, leaving about 1/2" or less. Stuff the squash, cover and bake 350 for 20 minutes or until squash is tender. Let sit 10 minutes covered before draining off what water is left and serving. We ate this with garden beans, fruit salad, corn bread and sweet tea.
