Coconut Loaf  

(Cake like bread)

This one I love because it has the most incredible flavor and texture.

 

Heat oven to 350°

Grease a 9x5x3 loaf pan

  • ½ cup butter, softened

  • 1 cup granulated sugar

  • 2 eggs

  • 1teaspoon vanilla extract

  • 2 cups all purpose flour

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • ¾ cup coconut milk (this does not have any sugar)

  • 1 and ¼ cups (fine cut) flaked sweetened coconut, packed (can put regular in blender and cut fine)

In a mixing bowl cream butter and sugar. Add eggs one at a time beating well after each addition. Beat in vanilla.

Then in small bowl mix flour, baking powder and salt, add to creamed mixture alternately with coconut milk, stir in the coconut.

Spread into a greased 9x5x3 loaf pan

Bake at 350° for 1 hour or until a knife inserted into the center comes out clean.

HINT:

After I took it out of pan I cooled it for awhile and then wrapped it in saran wrap and put in fridge. About an hour after I took it out and then sliced it. It was so much easier to slice and it didn’t crumble as much.
