Nutty Christmas Bread |
This is like a simple, cheaper
version of a fruit cake.
1 or more cups of chopped nuts (I use
English Walnuts, can use any type but peanut)
1 pound dates
1 cup maraschino cherries
1 cup flour
1 cup sugar
3/4 tsp. baking powder
3/4 tsp. salt
4 eggs
1 tsp. vanilla
Leave the nuts and dates whole.
Mix nuts, dates, and well-drained cherries together in large bowl and
set aside. Mix flour, sugar, baking powder, and salt. Stir
to coat the nuts and fruit mixture. Beat eggs, add vanilla.
Add to nut/fruit mixture. Pour into bread pan, greased and lined
with waxed paper. Bake 1 hour and 15 minutes (less is done
sooner) at 300*. Cool before serving.
PS: If you don't care for as
many dates use just a half pound and it still turns out great.
We like this since a lot of people don't like the candied fruit in
fruit cakes.
