Fun Onion Facts The substance in onions that brings tears to your eyes is a sulfuric compound. Ever heard of sulfuric acid? That's what is formed when the sulfuric compound rising from a cut onion reacts with the water in your eyes. It's a weak solution to be sure but it's enough to sting like the dickens. You can protect your eyes in two ways: by cutting up the onion under water or by chilling the onion and cutting into the root end last.
