Pam’s Banana Bread Recipe

Preheat oven to 350°

2 cups flour
1/14 teaspoon baking powder
1/2 teaspoon soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 beaten eggs
1 1/2 to 2 cups banana ( I put mine in freezer as well, even if they        are black, these are the best)
1 cup sugar (I prefer light brown)
1/2 cup cooking oil
1/4 to 1/2 half nuts (I prefer pecans)

Grease your loaf pan, mix your oil and sugar together till fluffy, add eggs; then alt your dry ingredients and banana till combined.  Top with your streusel topping (recipe below) bake and enjoy.  I have a tendency not to measure especially with topping nuts etc, so if you like more or less I would go with it.

Topping:    1/3 cup brown sugar, 1/4 cup flour, 2 tablespoon butter, 1/4 cups  finely chopped nuts, mix until crumbly and add to the top of bread  before baking.  

For a variation that my house likes is to drop the cinnamon and add 1/4 cup cocoa, instead of nuts add 1/4 cup choc chips to the topping.

Makes 1 loaf, bake 50-60 min at 350°
