"One of Those Days"

 

Have you ever had "one of those days" when everything goes wrong?

Well, yesterday was one of those days. I should have just stayed in bed and pulled the covers over my head and waited for today to come around!

Everything I tried to do was a disaster. Everything I touched I either dropped or managed to mess up. And on top of all that, I kept forgetting where I would sit something down. So today I'm not only a klutz, I'm an absent minded one! I'm glad I didn't have to get in my car and drive anywhere. Who knows what would have happened. Days like this are best spent in the safety of your own home, bidding your time until you can go to bed, and, hopefully, great the next new day with better luck.

I had already decided to just have "left-overs" for supper. It's much safer to warm things in the microwave than to actually cook, when you're having "one of those days". So I decided to try a new dessert recipe. Since I was warming over chicken and rice I thought a nice pumpkin dessert would be great. It's called Pumpkin Crunch or Pumpkin Dump Cake. I should have known better. I managed to get everything mixed without any serious problems. Poured it into my baking dish and realized it was the wrong size. No problem.....I just sprayed the proper dish and transferred my ingredients. Next came the dry cake mix, nuts and melted butter. Got that on top OK even though the butter managed to go all over the microwave when it was melting. Put it in the oven to bake. It had been in there about 25 minutes when I started to smell the aroma. ...................of lemon. Sure enough, I checked the box and I had grabbed a lemon cake mix instead of a yellow one!

My husband is not fond of pumpkin. He will choke down a piece of pumpkin pie to be polite but one piece is all he'll eat, all year. Unfortunately, he's not a big lemon fan either! So things aren't really looking good for me at this point. I also hate throwing food out unless it's 100%, absolutely necessary. So I decided to let it cool and we'd both taste it.

We ate supper and I served him his "surprise dessert", heaped with Cool Whip. He tasted it and immediately said, "I taste citrus. Am I right?" But he thought he tasted orange. He ate a couple more bites and I finally asked him if he really liked it. He told me it was really good........odd, but good. So I told him the whole story. He laughed and said he really liked it because the lemon wasn't overpowering, but actually masked the pumpkin enough to make it good.

He wants me to try making it again, only use a chocolate cake mix in it. Hmmmmmm.....chocolate and pumpkin ......that doesn't sound too bad.
